-35C to -40C blast freezer rooms are used when products must pass through the critical freezing stage quickly. Compared with a storage freezer, the blast freezer is sized around batch load, air velocity and required core-temperature pull-down time.
Fast freezing for product quality and production rhythm
Blast freezing is selected for seafood, meat, poultry, bakery products, prepared meals and other foods where slow freezing can damage texture, increase drip loss or slow the packing line. A correct design connects the room size, evaporator air throw, batch weight, product thickness and loading trolley arrangement into one cooling plan.
